Homemade Two-Bite Brownies


IMG_6141-2Every time I go to the grocery store I walk past the display of two-bite brownies, giving them a once-over. They look good, they look like they are interested in me. Should I approach? What should I say? Wait, they are brownies.

In fact, they are a $4 bag of brownies. So I ask myself this question when analyzing treats: could I make this myself? If the answer is yes, I’ll probably try it. Because a) everything tastes better homemade, and b) it will save me money. I love saving money almost as much as I love eating..

Mom’s Cookies

IMG_5700-2I was lucky growing up to have a mom that baked. We never had store-bought cookies in our lunch – something I whined about as a kid. But I now appreciate what my mom was trying to do. She taught me the difference between pre-made and homemade. She kept me from becoming someone whose recipes include ingredients like “1 box Bisquick” or “instant brownie mix”. (If you’re reading this and feeling offended because you use instant shit, come see me. You can still be saved.) Thanks, mom.

She used to make these cookies all the time when I was a kid. Everyone loved them (obviously) and I am going to share them with you because I’m mama’s little sweetie and I would never deprive you.

Chewy Coconut Cookies

There are few other cookie recipes I could give to you that are as simple as this. These cookies are super chewy, with crispy edges and a warm, buttery, coconut flavour. They’re so soft, you’ll want to bite into them in slow motion. (Or in fast motion, in that way you did when you were a kid and pretended your mouth was a chopping machine.)

I usually eat these plain, without topping, but I had a Hershey’s bar handy today. So I drizzled them with chocolate.

No ragrets.

Maple Pecan Scones

ittle doogie (that’s me) figured out how to make a light box this weekend, thanks to this tutorial. That’s right. My photography is about to get a little less embarrassing and a little more delicious.

This is another favorite from my cookbook by the Pioneer Woman. The scones are crumbly, tender, light and on their own not overly sweet. But they’ve been dancing in a maple-flavoured rain, and they gotsta warm up with a cup o’ tea.

Just these cookies. I can already hear the guy in the background, flailing one arm in the air and yelling “HAAYYY. WE’VE ALRIDDY HAD CHOC-LIT CHUP CUCKIES.” But these are chocolate chunk cookies. With salt. And some extra TLC. I promise if you get on this salty cookie train with me, you’ll get off in chocolate town with a hop in your step and a crumb in your pocket.

Chocolate Babka

 

IMG_1537There’s been a hole in my heart since that whole brioche debacle a few months back, and I decided that I had to try again. Because that’s what you do when you’re learning to bake! You try, fail, swear, kick scream and lose your mind, and then after a length recovery you try again.

So I came across this, how you say, “chocolate babka”. As I understand it, it is a sweet bread that Jewish people like to make. Apparently there’s a Christian version too. But I’m not here to give you a history lesson. This blog is supposed to be informal – that’s why the pictures are shoddy and the banner looks like crap. I don’t know anything about graphic design. I’m slowly learning, but I’ll tell you that while trying to create that banner I cried.

Anyway, I knew I had to give bread-baking another go. And I didn’t totally blow it this time. Well, you can be the judge of that. But remember this: when you bake something, nobody remembers what it looked like. They remember how it tasted. And you can learn from all my petty mistakes.

Cinnamon Bun Biscotti

IMG_1447“Do you know what biscotti is?” I asked my boyfriend lovingly, and with an appropriately serious tone.

“It’s that long hard cookie you dick into your coffee,” he responded, “I mean dunk.”

I swooned.

I used to hate biscotti, until, like, yesterday, because I didn’t understand it. HARD cookie? Sliced? Crunchy? Words? What was going on. But it turns out, biscotti is pretty good. And even though I’ve never tried the store-bought stuff, I’m sure (like anything else) homemade is better. And these really taste like oblong cinnamon buns.

So enjoy your dicking. I mean dunking.

Apple Pie

Mom came to visit this weekend and brought in her little suitcase a box of lard, a bag of apples and a dash of family fun! Golly it was a time.

My mom has made this pie about two hundred times, so I decided to soak in an extra pastry tutorial with my camera while she did all the work. Plus, this pie is a hot prize. I don’t usually post recipes that I haven’t actually made myself, but she my mom. She can be my proxy.
