Welp, Little Doogie’s gotta work early this week, and she doesn’t have time to cook a gat dang breakfast. And she doesn’t want to pay $5 for her favorite Love Crunch granola, either. So she made this granola from scratch. It is sweetened with pure maple syrup and coated with sexy dark chocolate, tossed with sea salt flakes, and dotted with extra chocolate chips.
Golden Grahams and Fruit Loops are taking a back seat this week.
I was unsure of the sea salt in this recipe at first, but it does add a nice touch to the dark chocolate. Adding some toasted coconut would have been nice, too, and I’d definitely recommend adding mini chocolate chips to the finished granola.
This recipe is pretty easy, you basically have to concentrate on not burning it in the oven.
- 2 cups oats (rolled, or quick, i used quick)
- 2 tablespoons cocoa powder
- 1 teaspoon sea salt
- 1/2 cup dark chocolate chips
- 1/3 cup pure maple syrup
- 1/4 cup milk
Melt 1/4 cup (not all!) chocolate chips in the microwave for 1 minute, stirring halfway. Heat milk in a small pot on medium heat, until nearly boiling. Pour into chocolate chips and whisk until smooth.
Stir in maple syrup and cocoa powder.
Whisk until you’ve formed a smooth chocolate syrup.
Fold oats into chocolate mixture until evenly coated. Spread oats out over a parchment-lined baking sheet and bake for 25-30 minutes, stirring every ten minutes.
Allow to cool COMPLETELY, then add chocolate chips.
